Cast Iron Cobbler with Louisiana Blackberries with Sassy Sauce
Cajun Aces, Season 2
1 ½ cups all purpose flour
2 tsps baking powder
1 tsp kosher salt
2 cups sugar, divided (1 cup for batter and 1 cup to pour over fruit)
1 stick (½ cup) melted butter
1 cup whole milk
12 ozs fresh blackberries
1 cup boiling water
1 (14 ounce) can sweetened condensed milk
1 cup heavy cream
Splash of Rum
For the Cobbler
Heat oven to 350 degrees. Butter a 10 inch cast iron skillet.
In a large bowl, whisk together flour, baking powder, salt, 1 cup sugar, melted butter, and milk. Beat well and pour batter into the buttered cast iron skillet. Top with the fresh dewberries. Sprinkle with 1 cup sugar and then pour on 1 cup boiling water.
Bake for 35-40 minutes. Pour sassy sauce over the top before serving.
For the Sassy Sauce
Whisk together the sweetened condensed milk and the heavy cream until combined and warm in a saucepan. Spike with rum.
