Ingredients

  • 1 large green tomato, sliced
  • ¾ cup extra virgin olive oil
  • 2 tbsps cane vinegar
  • ½ lemon, juiced
  • ½ cup basil leaves, chopped
  • ½ cup garden herbs (parsley, cilantro, sage), chopped
  • 2 tsps red pepper flakes
  • Kosher salt and freshly ground black pepper

Directions

  • Heat grill to medium high heat. Add sliced tomato to the hot grill and cook on each side for 3-4 minutes, until nice grill and char marks appear. Remove from grill and, once cool enough to handle, chop.
  • Add the olive oil, vinegar, lemon juice, chopped herbs, red pepper flakes, and whisk to combine. Add the chopped green tomato to a medium bowl and stir to incorporate. Season with salt and pepper.
