Ingredients

  • 4 medium russet potatoes, peeled and diced
  • 4 hard boiled eggs, peeled and chopped
  • 1 ½ tbsps Creole mustard
  • 1 ½ tbsps yellow mustard
  • ¾ cup mayonnaise
  • 3 tbsps sweet pickled relish
  • Kosher salt and freshly ground black pepper

Directions

  • Add potatoes to a large pot of cold water and season with salt. Bring to a boil, reduce to a simmer, and cook until tender, about 12-15 minutes. Drain well.
  • In a large bowl, mix together the eggs, mustards, mayonnaise, pickled relish, salt, and pepper. Add the drained potatoes and stir well to combine.
