Ingredients

  • ¾ cup shoepeg corn kernels
  • 16 ozs frozen purple hull peas (boiled in water and sea salt until tender then cooled)
  • 16 ozs frozen baby lima beans (boiled in water and sea salt until tender then cooled)
  • ½ red bell pepper, diced
  • ½ green bell pepper, diced
  • 1 red onion, diced
  • 1 jalapeño, small, seeded, finely diced
  • ⅓ cup chopped cilantro (finely, loosely measured)
  • Farmer's Caviar Dressing

Directions

  • Combine the corn, purple hull peas, lima beans, red bell peppers, green bell peppers, red onion, jalapeño, and chopped cilantro.
  • Toss with Farmer's Caviar Dressing and taste and adjust seasoning as necessary. Marinate in the fridge for an hour if time allows.
