Filet redfish and leave skin and scales on. Remove the gut and any pin bones. Score the flesh of the meat 3 to 4 times, depending on the length.
Place the redfish filet on the grill, scale side down. Add pats of butter. Sprinkle seasoning on top, cover to cook top of fish with radiant heat. Allow fish to cook on one side only (about 6-8 minutes) till opaque
