Grilled Sum­mer Squash with Chow Chow Chimichurri

Ingredients

  • ¼ cup olive oil
  • 2 summer squash, sliced on the bias
  • Kosher salt and freshly ground black pepper
  • Chow Chow Chimichurri

Directions

  • Add squash to a bowl and drizzle with olive oil and season with salt and pepper. Toss to coat.
  • Heat grill to medium high heat.
  • Grill squash until nice grill marks appear and it’s tender, about 4-5 minutes on each side. Remove from grill, place on a platter, and drizzle with the Chow Chow Chimichurri.
