Ingredients

  • 2 tbsps butter
  • 4 cups sliced okra, sliced on a sharp bias
  • 4 cups chopped heirloom tomatoes
  • 1 medium onion, chopped (size of dice)
  • ½ cup chopped celery (slice or dice)
  • ½ tsp minced garlic
  • ¾ tsp Cajun Select seasoning
  • ½ tsp black pepper
  • 1 tsp Tabasco hot sauce
  • ½ cup chicken stock
  • ½ tsp cane vinegar

Directions

  • Melt butter over medium heat
  • Add onions, celery & garlic and cook until tender (7-8 minutes).
  • Add tomatoes and okra and cook down for an additional 5 minutes.
  • Add chicken stock, hot sauce, cane vinegar & seasonings.
  • Cook for 25-30 minutes and allow to simmer (stirring occasionally).
